An Indian Spice Affaire this Thanksgiving

For me, Thanksgiving is like a culmination of two Indian movies: Aasif Mandavi's Today's Special - a family drama made even more colorful by a culinary pursuit, and Monsoon Wedding - a big, galloping wedding movie in which the party is a clear metaphor for the world.

So, in the spirit of family, love, and debaucheries, how about an Indian Thanksgiving, from LXV Wine, to carry the mood and flavors of the night! Just have ghee, garam masala and a few basic whole spices in your pantry and we would have made an Indian Chef of you by Thanksgiving! And give the wine a lot of thought! As Rumi said,

"Either give me more wine or leave me alone."

A glass of a Brut (dry) Sparkling wine will strike a celebratory note, as family and friends arrive with a heightened anticipation of Thanksgiving.
LXV SUMMER SATINE

Few bottles of racy whites chilling in a bucket of cold water (not ice), with flowers floating in them, will entice your guests to refill their glasses to  complement the unparalleled array of samosas, kebabs and other appetizers.

The aromatics of an off-dry Riesling from Alsace or Germany, a New Zealand Sauvignon Blanc or a statelier Viognier, like LXV Summer Satine, will complement the bouquet in the air.

The refreshing acidity in these wines will cleanse your palate for the next bite, as you tantalize your taste buds, back and forth, with samosas, and kebabs. And if a conversation is your aperitif,  the wine will be your silent companion for the quiet reflections, in midst of the revelry!

A simple way to make a open-faced samosa : use phyllo cups and bake them with the samosa stuffing! And two delicious kebab recipes that could be prepped in advance: Malai (cream-based) chicken kebab and Seekh Kebab!

As the mood starts levitating, and stories start spilling about childhood shenanigans and adult debaucheries, the heavenly notes of spice will waft into the air, as you set the table with the most extravagant accompaniments of cumin potatoes, very rich and royal navratan korma (9 jewels), or the very exotic Smoked Dhaba Dal (smoked from a live coal).

But what will steal the show will be the Tandoori Turkey! This beautiful bird, with a fiery hue of orange and red, and succelent juices dripping with every cut, curried drippings (just add a dash of garam masala to the drippings), and served with piping hot naan bread, will have everyone begging for more!

LXV RESERVE SYRAH

This calls for some earthy wines that will build on the complexity of these dishes and the sentiment.

Young Rhone wines that typically employ little oak barrels when aging, sing with such dishes. The spice notes in Syrah from Hermitage or the Grenache in a  Ch√Ęteauneuf-du-Pape will complement the myriad of masalas, with the fruit in the wine tempering the soaring spice. LXV Reserve Syrah generously offers blueberries and boysenberries, with hints of petrichor and dark spices, followed by layers of sandalwood, cedar, and dried tobacco.

Always keep an additional glass of white wine next to your red. Sometimes a white can do more for a complex meal than a red can. And it is always a great palate cleanser!

And if you truly believe this is the feast for Gods, open that stowed away Sauternes with a biryani (this one is a personal favorite!).

I would not take away from the traditional pies. But delicately lace them with cardamom, cinnamon, nutmeg, or all aspice. And muse your guests with a sake tasting! Or stay true to tradition with a Late Harvest or Moscato d’Asti.

After everyone has bid adieu, and you are enveloped by the quiet of your home, treat yourself to a sip of Madeira. You deserve it...

You will never know the true value of a moment,
until it becomes a memory!

A Diwali night, made memorable by wine

I always wondered how would Rumi romanticize a Diwali party? Probably with wine savored and spilled between glorious musings...

In the spirit of love and life, how about some luscious wine to carry the mood and flavors of the night!

A glass of a Brut Sparkling wine will already spark fireworks, as your guests arrive with a heightened anticipation of the Diwali night.

Few bottles of racy whites chilling in a bucket of cold water (not ice), with marigolds floating in them, will entice your guests to refill their glasses to  complement the unparalleled array of appetizers.

The aromatics of an off-dry Riesling from Alsace or Germany, a New Zealand Sauvignon Blanc or a statelier Viognier, will complement the bouquet in the air. The refreshing acidity in these wines will cleanse your palate for the next bite, as you tantalize your taste buds, back and forth, with samosas, kebabs, and chaat. And if a conversation is your aperitif,  the wine will be your silent companion for the quiet reflections, in midst of the revelry!

The puja, with its profound moments of chanting and offerings, will often create a nostalgia. A heaviness will set in the air, as everyone mulls on the meaning of this moment and of life.

What a great time to serve a classic Burgundy or Bordeaux. A conversation that will belong to a different region but will hit the similar chord of tradition and time.

As the mood starts levitating again, and stories start spilling about childhood shenanigans and adult debaucheries, the heavenly notes of spice will waft into the air, as you set the table with the most extravagant curries, gravies, and dals. Probably there is a recipe passed down by someone who you were thinking of all night. This tribute calls for some earthy wines that will build on the complexity of these dishes and the sentiment.
Young Rhone wines that typically employ little oak barrels, when aging, sing with such dishes. The spice notes in Syrah from Hermitage or the Grenache in a  Chateauneuf du pape  will complement the myriad of masalas, with the fruit in the wine tempering the soaring spice.

And if you truly believe this is the feast for Gods, open that stowed away Sauternes with the biryani. You will be offering your guests a memorable moment!

The epitome of the night is the beautifully crafted desserts. Bowls of ras malai and phirni will be passed  around, as everyone settles down for a  melodious rendition of an old Bollywood melody, or someone strumming on their sitar. Muse your guests with a honeywine.

As shubh diwali becomes shubh ratri, and you are enveloped by the quiet of your home, treat yourself to a ladoo and sip of Madeira.

You will never know the true value of a moment, until it becomes a memory!

ROASTED BONE MARROW with Black Truffle Salt

Dear mitra (friend),

This summer, fold in romance into the sultry twilight BBQ, with a sensory wine, savory bone marrow sizzling on the grill that secretly laced with Umami, and a sultry summer playlist, created exclusively for you, rendering a fiery spark.
We're talking about smoldering, mesmerizing fire. It dances. It destroys. Who hasn't been entranced by its transformative tricks—it's ability to caramelize everyday crackling vegetables into sweetly charred morsels; to plump raw meat to juicy, pink perfection? Like a lover's spell, fire renders its subjects irresistible to all five senses.

SPICE & RECIPE - Roasted Bone Marrow with Black Truffle Salt

ROASTED BONE MARROW

LXV Spice Pairing
Black Truffle Salt, Savory All Spice, Ginger, Nutmeg
(Complimentary with the purchase of LXV Wine)

Ingredients
- 8 to 12 center-cut beef or veal marrow bones, preferably cut lengthwise
- 4 tbsp Canola Oil
- Salt & Pepper for seasoning
- 1 packet LXV Spice Blend

Recipe
Turn BBQ on high and let heat to 500F.
Rub each bone down with canola oil & sprinkle with salt and pepper. Place on BBQ for a short 45 seconds, then remove and place on roasting pan. (If the bones are cut crosswise, place them standing up; if the bones are cut lengthwise, place them cut side up. )
Preheat Oven to 500F. Sprinkle LXV Spice Blend on the marrows. Cook in oven on center rack for 15-25 mins. To test for done ness, insert a metal skewer into the center of the bone. There should be no resistance when the skewer is inserted and some of the marrow will have started to leak from the bones.
Serve the roasted bone marrow right away with a glass of LXV Lover's Spell

Other Pairing Suggestions
For the Wine
Foods that call for a wine with heartiness and structure, but not astringency - Braised meats (beef or venison), roasted meats, briskets, mushroom sauce.
For the Spice Blend
Sprinkle a little on any course: With bread and butter, on some fresh steamed vegetables, with popcorn, on mushroom ravioli. You could even sneak it into your creme brulee for a little sultry depth.

WINE - LXV Lover's Spell
Ah, Lover's Spell!
Inspired by Aindrajala, the KamaSutra art of Magic, LXV Wine's 2013 Lover's Spell is strong enough to stand alongside this rich, seductive entree. A dynamic ruby red union of Cabernet and Syrah cascades into the glass, flirting first with the eye.
Subtle hints of cedar, cigar box, and violet beckon the nose to chase this playful minx. Like a first kiss, the first sip tingles in the mouth as it warms in the belly. This bottle of elegant LXV Wine blooms into a wave of ripe figs, succulent Damson plums, and black cherry bliss.
Like moth to flame, you are now within the grasp of a smoldering spell. If you're lucky, it will rage on into the balmy night.

Decant LXV Lover's Spell for at least an hour, in a cool dark place. For a hot day, place the decanter in the refrigerator for 5 mins before serving.

The 500th Sutra for LXV!

500 lives, 500 hearts, 500 minds. The context of these separate lives are completely unrelated, except they have each walked forever into our hearts and minds here at LXV. We are boutique, small, home grown and nourished. As such, club members are our life force, our blood, what nourishes and inspires us, what rewards us with a smile at the end of, and throughout, a long day. We have neither national nor international distribution chains, we are not carried under the florescent light of supermarkets. Our wines, and our loyalty, is stored and coveted in the cellars, wine racks, and wine refrigerators of our club members.

In 2010, we started with two hearts and minds. Neeta Mittal was the vision, and Kunal Mittal was the focused guidance. They acquired a premium wine property on the coveted Willow Creek Road in Paso Robles.
"Paso Robles reminds me of India", says Neeta. "Maybe because of the relationship people have with the earth and with each other. There is an intimacy in the ecosystem in Paso. And that expresses itself in the grapes, in the winemaking, and ultimately in the wines."

This inspiration gave rise first to a single wine, a single reflection of what lied within. Our first tasting was on the ranch on Willow Creek with that single wine - Rising Tempo. We garnered the support of not just club members, but communities. And all they had to back, was a vision!

This momentous love spun into the opening our famous lounge in 2013 which elicited, at the opening in fact, the sixty-fifth, heart and mind who chose to pick up a pen and add their vitality to our club family.

This year the family also saw our first ever club exclusive wine, Club Reserve Cabernet Franc, which remains Kunal's muse! This was the first time members truly collected the bounty of our thriving relationships with growers for the singular reason of releasing specialty wines from us, to only them: our LXV family.

Many others continued to join us, to use pen and ink to sign with us and add support of their heart’s and mind’s, receiving offerings of our wines conveniently delivered to their doorstep, twice a year, customizable upon request.

With our LXV family, we have evolved. We do not send shipments on Fridays in order to preserve quality and reduce journey time from warehouse to doorstep. We ship only in the cooler months, November(right before Thanksgiving!) and April, to utilize natural temperature control. And, we always offer customizable shipments, to cater to the diverse tastes our LXV family.

One thing that has remained consistent is our focus on the Willow Creek District, Paso Robles’s most premier and respected AVA, and the location of our 14 acre Ranch. The location of the ranch is where we and our club members go to feel grounded, to touch our roots. In late 2015, LXV finally attained a permit to build our dreams, to adapt to this next step by extending ourselves even more with the designs that push the conceptions of a tasting room to its limits.

The ranch is the future sight of the exclusive LXV Club Only Bed and Breakfast, open aired tasting room, and estate vineyard. Who says a room needs walls ? Eventually, our club members will have their own private tasting room at the ranch. They will be showered, in the LXV style, with our company and exotic pairings with the special terroir of Willow Creek embracing us.

As we welcome the 500th member into our family, please pick up the pen (or click) and let us give you our gratitude, in quality wines sourced from the premier Willow Creek District, and the strength of an LXV family.
